Equipment

  • crock pot (large)

Ingredients

  • 2-3 lb Corned Beef
  • 15-20 Small Potatoes (any work but I like using red and yellow potatoes
  • 1/2 Head Of Cabbage
  • 1/2 White Onion
  • 1 lb Small Bag Baby Carrots
  • 1 cup Water
  • Salt/Pepper
  • 2-4 Garlic Cloves *Optional

Instructions

  • Cut small potatoes in half and then add to crock pot.
  • Next cut 1/2 a head of cabbage into large slices/wedges and put on top of the potatoes. If you really like cabbage, cut up an entire head of cabbage and add to the crock pot. (For a full head of cabbage you will need a large crock pot!)
  • Cut up 1/2 of a white onion. For this I like to cut small pieces but you can do large slices as well. Once cut, add on top of the cabbage.
  • Open the bag of baby carrots on pour all the carrots on top of onions.
  • Add corned beef on top of veggies. Corned beef, if it's not already seasoned comes with a seasoning packet. Put seasoning on top of the corned beef. In addition, sprinkle a pinch of salt and pepper on the meat.
  • If you are using garlic cloves, toss 2-4 of them in the crock pot.
  • Lastly, pour one cup of water in the crock pot.
  • Turn the crock pot on low for 8-9 hours.
  • Once the meat is done, take it out of the crock pot and cut it in slices against the grain. Another option is leaving meat in the crock pot and shredding it. Corned beef cooked in the crock pot gets very tender and yummy! Either put sliced meat back in the crock pot with the veggies to serve, or put the veggies, meat on a plate to dish out.
  • Enjoy!
